Mini quiches à la ratatouille

Summer is almost here, the aperitif period begins slowly. Unfortunately, the chips and peanuts we eat on terraces with our friends are not great for our line ... But it is quite possible to have fun without exploding its calorie counter, just have a little imagination and spend a few moments in the kitchen to give sensations to your friends. We offer you a delicious recipe of individual quiche with ratatouille to easily combine pleasure and health!
The ingredients for 12 mini quiches:
- 1 roll of puff pastry
- 3 eggs
- 50 g of grated Gruyère cheese
- Curry powder
- Salt and pepper
- 1 eggplant
- 2 zucchini
- 1 red pepper
- 3 tomatoes
- 1 clove of garlic and 1 onion
Start by preparing the ratatouille (for the most lazy or those who do not have time, you can also use a prepared ratatouille). Peel and cut into pieces the vegetables, finely chop the garlic clove and put everything in an oiled saucepan. Cover and simmer on low heat about 45 minutes. Add salt and pepper to your taste. Then go to the making of your mini quiches. Preheat the oven to 180 ° C. Butter small tartlets mold. After unrolling the puff pastry, cut it with a cutter into 12 identical disks. Place the discs in the molds and prick them with a fork. In a bowl, beat the eggs. Add the ratatouille, the gruyere then the curry, add salt and pepper to season. Blend quite a long time until you obtain a very homogeneous preparation. Then pour this mixture over the dough in the small molds. Bake 40 minutes. Wait until the quiches are warm to unmold easily. Serve warm or cold. .
