Soupe froide courgette / feta

A fresh and tasty recipe

Cold soup is one of the most enjoyable dishes to have in summer. Fresh, gourmet, spicy, there is something for everyone. We offer you here a refreshing and healthy recipe, which combines the sweetness of zucchini with the summer delicacy of the feta.

Ingredients for 4 to 6 bowls of soup

  • 10ml of olive oil
  • 1 red onion
  • 3 cloves of garlic
  • 2kg of zucchinis
  • 2 bay leaves
  • Thyme
  • 2 tablespoons of lemon juice
  • 15g of mint
  • 100g of feta


Finely chop the onion and cloves of garlic, cut the zucchini into large cubes. In a large saucepan, heat oil and add garlic and onions, then zucchini. Cover with a lid and cook for about 10 minutes, stirring occasionally. Add the bay leaves and a few sprigs of thyme and cook another 10 minutes. Add the lemon juice, cover again and cook for 15 minutes over low heat. When all zucchini are soft they are cooked! Then remove the liquid from the pan and mix everything in a blender until you get a smooth soup. Let cool. Before serving, add the chopped mint leaves to the soup and crumble it.
